Chocolate Chip Banana Bread

I’m kind of a banana fanatic.  I have to limit myself to one banana a day, because I could easily eat bananas in various forms all day long (smoothies, bananas with peanut butter, just plain bananas, bananas forever and ever amen.) I have often been accused of intentionally buying too many bananas for myself in a week (let’s be real, does “too many bananas” actually exist?)… and to be fair, these accusations are totally true.  I will ALWAYS buy more bananas than I need so they can get extra ripe and give me an excuse to bake BANANA BREAD!

You will need:

3 or 4 ripe bananas, smashed

1/3 cup melted butter

1 cup sugar

1 egg, beaten

1 tsp vanilla

1 tsp baking soda

Pinch of salt

1 ½ cups all-purpose flour

½ cup mini chocolate chips (or whatever chips or nuts or anything that you’d like)

An extra 3 tbsp sugar

1 tsp ground cinnamon

The beauty of banana bread is that it’s so versatile – You can do it plain, with chocolate chips, peanut butter chips, walnuts, pecans… pretty much anything tastes good in banana bread.  Feel free to add your own favorites to this recipe!

Pre-heat your oven to 350, and combine all ingredients except the extra sugar and cinnamon.  This batter is really easy to blend, and you could do it with a wooden spoon with no issues.  Grease your bread pan (really really well!  This bread is dense and you don’t want it to stick or break in half when removing).  Combine the extra sugar and cinnamon in a small bowl, and line the bottom of the greased pan with the combination.  This will give your bread a delicious cinnamon sugary crust, as seen in the last photo.  Bake for about 50 to 70 minutes (this will vary by pan size, oven, etc. – the best way to tell if your bread is done is to stick a toothpick through the center, and see if it comes out clean.)

Remove from oven and cool on a wire rack.  Slice, and serve!  I prefer to eat mine for breakfast with a little sunflower seed butter – such a great flavor combination.  What is your favorite way to eat banana bread?
