I mentioned before that I occasionally cater baked goods for events.  This weekend was the birthday party that I was testing out the lemon cupcakes for.  In addition to lemon cupcakes, I made possibly the most delicious Chocolate Chocolate Chip Buttermilk Cupcakes I’ve ever made, so today, I’ll share that recipe, and show off how beautiful the display wound up being!  Chocolate lovers—this will quickly become your new favorite cake.

You will need:

2 ½ cups all-purpose flour

1 cup cocoa powder

1 ½ tsp baking soda

½ tsp salt

2 cups granulated sugar

2/3 cup vegetable oil

2 eggs

2 tsp vanilla extract

1 ½ cups buttermilk (full fat!)

1 cup mini chocolate chips (optionally, but encouraged)

Pre-heat your oven to 350.  In a small bowl, combine flour, cocoa powder, baking soda, and salt.  In a large bowl, whisk together sugar, oil, egg, and vanilla until well combined and fluffy.  Alternately mix in flour mixture and buttermilk, making three additions of flour, two additions of buttermilk.  Fold in chocolate chips.  Scoop batter into muffin pan lined with paper cups (seriously, if you haven’t gotten an ice cream scoop for this part yet, you’re doing it wrong!), and bake for about 20-25 minutes.  You’ll know they’re done when they are springy to the touch at the top, and/or if a tooth pick stuck in the center comes out clean.

Cool and frost with your favorite frosting recipe!  I’d again recommend the vanilla buttercream listed with the lemon cupcakes.  That’s what I frosted with, and they were an absolute dream!
