Banana Streusel Muffins

Here comes your weekly banana recipe!  I think I’ve said before that  I love banana bread on an unspeakable level, but sometimes the hassle of having to slice a piece and put it on a plate on my way to work is just too much.  This week I took the easy route and baked up some Banana Streusel Muffins!

You will need:

1½ cups all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

½ teaspoon salt

3 large bananas, mashed (reserve 1 tbsp for crumb topping)

¾ cup white sugar

1 egg, lightly beaten

⅓ cup butter, melted

⅓ cup sugar

And for the topping:

½ cup brown sugar

1 tbsp reserved mashed bananas

2 tablespoons all-purpose flour

½ teaspoon ground cinnamon

1 tablespoon butter


Pre-heat your oven to 375.  In a large bowl, mix together flour, baking powder, baking soda, and salt.  In a separate bowl, combine bananas, sugar, egg, and melted butter.  Stir banana mixture into dry mixture and mix into completely incorporated.  Spoon batter into prepared muffin pans.

For the streusel topping, mix together brown sugar, 2 tablespoons flour, 1 tbsp of mashed bananas and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal.  Spread over each unbaked muffin evenly.  (I added a little more than the 1 tbsp of mashed banana to mine, and it would up a little too wet, but still totally delicious.)

I used mini muffin pans, so I only had to bake for about 8-10 minutes.  If you are using full-sized muffin pans, bake for 18-20 minutes, until golden brown.  Now I have perfect little mini muffins to grab and go on my way to work 🙂
