The Perfect Gingerbread Cut-out Cookies

It’s crunch time, guys!  This weeks posts will be all about things you will probably be doing in this last week before Christmas 🙂 I’m sure it comes as no surprise to you that I’ve been working hard on cookies, and have even attended some cookie decorating parties and enjoyed all the madness.  With this comes a whole lot of preparation baking.  Today, I’ll share with you The Perfect Gingerbread Cut-out Cookies (sugar cookies to come!) for all of your gingerbread man needs.

You will need:

1/2 cup brown sugar

1/2 cup mollasses

2 tbsp ground ginger

2 tbsp cinnamon

1 tsp ground cloves

1/2 tsp nutmeg

3/4 tsp salt

1/2 tsp baking powder

1/2 tsp baking soda

1 stick unsalted butter

1 egg

1 tbsp vanilla extract

3 cups all-purpose flour

These are definitely cookies that I would suggest preparing ahead of time if you are hosting a cookie party, because the dough needs to chill for a while, and it does require a bit more attention than your average cookie.

Start off by mixing your sugar, molasses  spices, and salt in a sauce pan, and putting them over a medium heat.  Stirring constantly, slowly bring your mixture to a boil, until your sugar is melted.  Remove from heat and incorporate your baking soda and baking powder.  Add butter, egg, and vanilla extract, and combine completely.  Add your flour in 3 batches, mixing well each time.  Divide the dough in half or thirds, pound it down into a disk, wrap in plastic wrap, and chill for at least 1 hour.

Once cooled, pre-heat your oven to 350.  Roll out your dough in a lightly floured surface to about 1/4 inch thickness.  Using cookies cutters of your choice, cut your shapes out, re-rolling dough when needed.  Bake for about 10-12 minutes, until golden brown and crispy on the edges.  Let them cool completely, and enjoy your decorating!

My choice in decorations may not be the most classic– I have a boyfriend who knows me well, and surprised me with skeleton gingerbread cookie cutters for the occasion… That’s the fun in cookie decorating, you can do what you like!
