Red Velvet Strawberry Santa Hat Cupcakes

I think I’ve mentioned before that my favorite kind of cake is Red Velvet, but let me make this very clear– there is nothing as delicious as HOME MADE RED VELVET.  Restaurants can’t seem to get it right, I wont waste my time with a box mix… but home made red velvet is so amazing I can’t even wrap my brain around it.  And the beauty is, it’s really not a complicated recipe to make!

Today I’ll share my best and most prized Red Velvet Cupcake recipe (and the best cream cheese frosting to go with it!), with a little twist– Strawberry Santa Hats on top!  Although these are RED velvet cupcakes, you’ll notice mine are green — adding a little Grinchmas into the mix 🙂

You will need:

2 1/2 cups all-purpose flour
1 1/2 cups sugar
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cocoa powder
1 1/2 cups vegetable oil
1 cup buttermilk, room temperature
2 large eggs, room temperature
2 tablespoons red food coloring
1 teaspoon white distilled vinegar
1 teaspoon vanilla extract

For the Cream Cheese Frosting:
1 pound cream cheese, softened
2 sticks butter, softened
1 teaspoon vanilla extract
4 cups sifted confectioners’ sugar

And of course, strawberries for your Santa hats!


This recipe makes 24 cupcakes, with a prep time of 20 minutes, and a bake time of 15-20 minutes.  Pre-heat your oven to 350.  In a medium mixing bowl, sift together the flour, sugar, baking soda, salt, and cocoa powder. In a large bowl gently beat together the oil, buttermilk, eggs, food coloring, vinegar. Add the sifted dry ingredients to the wet and mix in 3 separate additions, mixing until smooth and completely combined.

Divide the batter evenly among lined cupcake tins, filling each cupcake about 3/4 full.  Bake for 15-20 minutes, until a tooth pick inserted in the center comes out clean.  Allow your cupcakes to cool COMPLETELY before decorating, so your frosting doesn’t melt off!

For the frosting:

In a large mixing bowl, beat the cream cheese, butter and vanilla together until smooth. Add the sugar and on low speed, beat until incorporated. Increase the speed to high and mix until light and fluffy.

Wash and dry your strawberries, and slice the leafy top off.  To make these look like Santa hats, simply pipe a thin swirl of frosting on the top of the cupcake, place the strawberry in the center, and a pipe a little dollop on top, as seen below:


Repeat with each cupcake.  Not only are these the best red velvet cupcakes in the history of red velvet cupcakes, they’re so cute that nobody will be able to resist them!

    Love this recipe! I often find red velvet cupcakes somewhat tasteless without icing but I just took these out of the oven and snuck a plain one and it was just delightful!! Can’t wait to try them with the icing when they cool!!
