Merry Christmas Eve! Hope everyone is well prepared! I’ve been running around like a maniac and baking like there’s no tomorrow– I can’t even decide if I’m thrilled or terrified that Christmas is already here! So I’ll keep this short and sweet: today, I have for you a simple, pleasant treat, Candy Cane Chocolate Chip Cookies!
You will need:
2 cups + 2 tbsp all-purpose flour
1 tsp baking soda
1 tsp salt
2 sticks salted butter at room temperature
1 cup sugar
1/2 cup firmly packed light brown sugar
2 large eggs at room temperature
1 tsp vanilla
1 tsp water
2 cups semi sweet chocolate chips
1/2 cup crushed candy canes
Pre-heat your oven to 325. Line 2 large cookie sheets with parchment paper. Combine flour, baking soda, and salt. In a large bowl, beat together butter, sugar, and brown sugar. Beat in eggs, followed by vanilla and water. Mix in flour mixture until just combined. Mix in chocolate chips and crushed candy.
Using 2 tbsp of dough per cookie, drop dough 3 inches apart on the cookie sheet. Bake cookies until golden brown, about 20 minutes. Let cool for 5 minutes, then move to a wire rack to cool completely.
These cookies have the perfect amount of peppermint without being overwhelming, and are a great, crispy, chocolate chip cookie 🙂
