Snowball Cookies

I can’t even believe Christmas is over, the last few weeks have felt like a whirlwind of ridiculousness; I hope everyone had a lovely holiday!  This probably would have been a great recipe to share pre-Christmas, but this buttery pecan delicacy is my favorite winter cookie, requires so little, and should probably be eaten year round anyway, so I definitely encourage everyone to make and enjoy them!

You will need:

1 cup unsalted butter, room temperature

3/4 cup powdered sugar

2 1/2 cups all-purpose flour

1/4 tsp salt

1 tsp vanilla

1 cup finely chopped pecans

Extra powdered sugar, for rolling.


Pre-heat your oven to 350.  Start off by whipping together your flour, powdered sugar, vanilla and salt, until fluffy.  Add your flour and combine completely.  Toss the pecans in and mix until evenly distributed.  Roll out rounded tablespoons of dough into balls and place on prepared cookie sheets.  Bake for 15-20 minutes, until slightly golden at the edges.

Allow your cookies to cool slightly, but still be warm.  Place your extra powdered sugar on a plate and roll your warm cookies through it.  The powdered sugar should stick and give you the perfect little snowballs 🙂  This has always been my favorite cookie to look forward to at the end of the year, they are the perfect mix of buttery sweet goodness.
