I’ve been anxiously awaiting the time to share this recipe, but I had to wait until after Christmas, because they were part of a gift to my wonderful friend Jess. She is a big fan of chocolate chip cookies, marshmallows, and s’mores — sounds like these things would go great together, right? Turns out they really, really do! In the interest of not wasting valuable holiday baking time on a recipe I had never tried before, I threw these suckers together using Tollhouse pre-made cookie dough, which was DELICIOUS, but they would be totally great with your favorite home made cookie dough as well 🙂
You will need:
1 Package of Tollhouse Chocolate Chip Cookie Dough
Graham Crackers (enough to line the bottom of whatever pan you choose to use)
1 – 2 standard sized Hershey’s chocolate bars
1 bag mini marshmallows
Pre-heat your oven to 350. Line a pan (brownie pan, glass pan, pie pan, whatever you prefer!) with graham crackers. Begin to cover the graham crackers with raw cookie dough, pressing down and into corners to create an even, flat surface. Your cookie dough layer can be as thin or thick as you want, just consider the thicker you layer it, the longer you will have to bake. Place the graham crackers and cookie dough in the oven, and bake until lightly browned, and a tooth pick inserted comes out fairly clean. Immediately break peices of chocolate and lay across hot cookies. Pour entire bag (or less, if you don’t want to go crazy :)) of marshmallows over the top, and distribute evenly. Place back in oven and bake for 3-5 minutes, until marshmallows have toasted. Remove and let cool slightly before serving.
When I tell you this simple treat blew people away, I mean it really went over well. We weren’t able to serve it fresh out of the oven, but slicing a piece and tossing it in the microwave for 15 seconds made all the difference. Perfect, gooey, chocolaty sweet Chocolate Chip Cookie S’Mores Bars.
