Cake Batter Cookies

I’ve mentioned before that sometimes I like to cheat and re-work a boxed cake mix into something infinitely more delicious, and this week, success was found in Cake Batter Cookies 🙂

You will need:

1 box (18.25 oz) cake mix (I used white cake and added an obscene amount of sprinkles– Funfetti would be easier!)

1 tsp baking powder

2 eggs

1/2 cup vegetable oil

1/2 tsp vanilla extract

1/2 cup (OR MORE… I suggest more!) colored sprinkles


Pre-heat your oven to 350.  Nothing fancy or special about this recipe, and no separation of wet/dry ingredients necessary– mix together everything except the sprinkles and combine completely.  Add the sprinkles last so the color doesn’t bleed too much through the dough 🙂  Drop rounded tablespoons of dough onto cookie sheet, and bake for 8-10 minutes.  Allow these cookies to cool on the sheet for about 5 minutes before removing– they’ll be pretty soft still, but become more solid as they cool.  This is a great way to get your cake batter fix without worrying about raw eggs– it tastes more like the batter than a baked cake!
