Peanut Butter Banana Oatmeal

As a connoisseur of peanut butter and bananas, and a lover of oatmeal, I find two things appalling- 1. There is no peanut butter banana instant oatmeal, and 2. People don’t seem to realize how easy it is to just cook up your own oatmeal.  Today’s post is a simple recipe, but so mind-blowingly good and filling that it’s worth sharing 🙂

You will need:

3/4 cup milk (I use skim)
3/4 large banana, mashed (slice the rest for garnish :))
1/2 cup old fashioned oats
1 tbsp peanut butter (I used lowfat)
1 tsp brown sugar, packed (optional)

In a small saucepan, whisk together milk and bananas.  Bring the mixture to a boil over medium heat.  Mix in your oats, and bring heat down to low.  Simmer for about 5 minutes, stirring occasionally.  When they oats are done (most liquid has been absorbed, oats are soft), mix in peanut butter.  I added brown sugar and sliced bananas to the top 🙂

It’s as easy as that!  I wont deny the simplicity of adding hot water to an instant oatmeal packet, but if you have a few extra minutes in the morning, I think you’ll be pleasantly surprised!
