Valentines Day Wafer Cookie Sandwiches

I am forever an advocate of cute little holiday themed treats, so Valentines Day is really no exception.  These cute and simple heart shaped wafer cookie sandwiches definitely set the baking mood for me 🙂  I did about half of mine with the vanilla cream recipe that I will include here, but I’ll be honest with you– that was just for the pink!  Since I don’t have the BIGGEST sweet tooth, I personally think these taste better with a little peanut butter between them.

You will need:

For the wafers-

1 cup unsalted butter, room temperature

2 cups all purpose flour

1/3 cup heavy whipping cream

Granulated sugar, for sprinkling

For the Vanilla Cream-

1 1/2 cups powdered sugar

1/2 cup unsalted butter, room temperature

1 tsp vanilla

Food coloring of your choice

Mix flour, 1 cup butter and the whipping cream until fully combined. Cover and refrigerate about 1 hour, or until firm.

Heat oven to 375°F. Using one-third of dough at a time, keeping the rest refrigerated until ready to roll, roll dough 1/8-inch thick on lightly floured surface. Cut with heart shaped cookie cutter.  Turn each cutout into granulated sugar, covering both sides.  Stick each cutout with a fork about 4 times (this is important, it will help reduce bubbling in your cookie!) Bake 7 to 9 minutes or just until set but not browned, and allow to cool completely.

While your wafers are cooling, beat powdered sugar and butter until smooth. Add vanilla and food coloring and beat until fluffy.  For each cookie, spread about 1 tsp of frosting on the bottom of one, and gently press another cookie on top, bottom side down.  Like I said, this cream is cute, but a little sweet for my taste, so if you’re like me, try these out with some peanut butter or nutella 🙂
