Strawberry Almond Muffins

I almost never bake with strawberries because they are pretty much perfect on their own, but I was on a muffin kick this weekend and figured I’d throw some strawberries in the mix.  This recipe makes 12 perfect, moist, Strawberry Almond Muffins!

You will need:

1 1/2 cups flour
1 teaspoon salt
1/4 cup brown sugar
1/4 cup white sugar
1 1/2 teaspoons baking powder
1/4 cup oil
1 large eggs
1/2 cup milk
1 teaspoon almond flavoring
1 1/2 cups strawberries, diced
1/2 cup sliced or chopped almonds

Pre-heat your oven to 350.  In a small bowl, mix flour, salt, sugars, and baking soda.  In a separate bowl, beat eggs, oil, milk, and almond extract.  Mix dry mix into wet mix and combine completely.  Add strawberries and almonds and carefully stir (if you stir too rough, your berries will smash, so be careful!).  Separate batter into prepared muffin tins and bake for about 15 minutes, until cooked through.
