Starbucks Copycat Coffee Cake

Here’s your February edition of “how to use a boxed cake mix and seem like you actually care” — Courtesy of my wonderful mother’s tried & true copycat recipe for Starbucks Coffee Cake 🙂

You will need:

1 boxed cake mix (yellow cake or butter golden recipe) plus the ingredients needed on the back of the box

2 sticks cold, salted butter

2 1/4 cups all purpose flour

1 1/2 tbsp cinnamon

1 3/4 cups sugar

1 1/2 tbsp vanilla



Pre-heat your oven to 350.  Prepare cake mix as directed.  You can use a 9 x 13 inch pan here, but I prefer to use a cookie sheet with raised edges for this cake– I like a thin layer of cake and a thick layer of crumb 🙂 Spray your pan with non-stick spray and pour batter into pan.  Baking time will vary here depending on the size of the pan you use, but bake until the center of the cake is just barely set/still a little jiggly.

While the cake is baking, combine the ingredients for the crumb topping in a large bowl.  You may have to bring this together a bit with your hands.  Once cake has baked to barely set, remove it from the oven, and immediately sprinkle a heavy layer of crumb over the entire pan.  Place back in oven and bake until a toothpick inserted in the center comes out clean.

Let cool and slice into squares, and serve with your favorite cup of coffee!
