Hot Cocoa Cookies

Since I live in Florida, a proper winter is sort of a thing of dreams.  Rarely does it drop below 60 degrees, and even on the occasion that it does, it only lasts for a few days at most.  That doesn’t leave many opportunities for a nice, hot cup of hot cocoa… So I’ve found a new way to enjoy it in Hot Cocoa Cookies 🙂

You will need:

1/2 cup part butter shortening
1/2 cup unsalted butter, room temperature
1/2 cup granulated sugar
3/4 cup light brown sugar, packed
2 eggs
1 tsp vanilla extract
2 3/4 cups all-purpose flour
3/4 tsp salt
1 tsp baking soda
3 1-ounce packages of hot cocoa
1/2 cup mini chocolate chips
3/4-1 cup marshmallow bits (if you don’t care to buy these alone, you can obviously just use the bits that come in the hot cocoa packets!)

Pre-heat your oven to 350.  Cream together your butter, shortening, and sugars.  Stir in your eggs and vanilla.  Add flour, salt, baking soda, and hot cocoa to creamed ingredients and mix until just incorporated.  Fold in chocolate chips and marshmallow bits.  Scoop rounded tablespoons on to a cookie sheet and bake for about 10 minutes, until browning at the edges, but still light in the center– these cookies are best slightly “undercooked,” keeping them perfect and chewy.  Remove, let cool, and enjoy!

    umm yum those look so good. I’ve never added hot cocoa packets to cookie dough..and this makes me want to very badly!
