Toffee Butter Cookies

I try to make a habit of baking cookies every week because I usually like to throw a little treat in with the lunches I pack — Fortunately I have one million tried & true recipes, and another million bookmarked to test out.  I’ll never run out of new things to try… pretty much anything tastes good in a cookie.  This week I kept it pretty simple with some Toffee Butter Cookies.  These are super soft and light because they’re made with powdered sugar, and the toffee and butter are the perfect compliment to each other 🙂

You will need:

2 1/2 cups flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 cup unsalted butter, room temperature
1 1/2 cups powdered sugar
1/2 cup toffee bits
1 egg
2 teaspoons vanilla extract

Preheat oven to 325 degrees. In a large bowl, beat together butter, powdered sugar, egg, and vanilla, until fluffy.  Add flour, baking powder, baking soda and toffee bits, beat at low speed until well combined.  It’s probably wise to line your cookie sheets with parchment paper or Silpat mats, because when the toffee bakes, it will definitely try to stick!  Scoop rounded tablespoons on to prepared cookie sheets, and bake for 10-12 mintues, until cookies are just beginning to brown on the edges — these cookies don’t spread much, so they may look underdone, but once you see the edges start to turn, you’re good!

    I’ve been wanting to try a cookie recipe that uses powdered sugar..and havent used toffee bits in forever!
