Strawberry Cheesecake Bars

Philadelphia/Kraft used to sell these seriously delicious Strawberry Cheesecake bars — mini pieces of absolute cheesecake heaven, right in the refrigerated section of your grocery store. It’s been years since I’ve seen them, which is both good and bad.  Good, because I could eat an entire box of them in less than 5 minutes, and bad, because I will forever have to listen to my boyfriend be devastated that they don’t exist anymore.  Sometimes I do him a solid and make a less pretty, but equally as delicious home made version 🙂

You will need:

For the crust:

1 1/2 cups Graham Cracker Crumbs
3 tbsp sugar
1/3 cup butter, melted

And for the Cheesecake:

2 8 ounce packages cream cheese, softened
1/2 cup sugar
1 tsp vanilla
2 eggs
1/4 cup – 1/2 cup strawberry preserves



Pre-heat your oven to 325.  Combine graham crumbs, 3 tbsp sugar and butter; press onto bottom of a standard brownie pan.  Beat cream cheese, 1 cup sugar and vanilla with mixer until well blended. Add eggs, 1 at a time, mixing on low speed after each just until blended. Pour over crust.  Spoon strawberry preserves randomly over the cheesecake, and with a knife, gently cut through the batter to create a marbled look.  Bake for about 30-35 minutes, until the center of the pan is cooked through and still slightly “jiggly”/ALMOST set.  Allow to cool before removing from pan — refrigerate for about 2 hours.  I personally use a Perfect Brownie Pan, which makes removal and slicing super easy 🙂
