Peanut Butter Sandwich Cookies

As a connoisseur of all things peanut butter and the kind of person who finds keeping peanut butter in the house dangerous temptation to eat an entire jar with a spoon, I obviously love to make some seriously peanut buttery treats.  These are nothing short of a peanut butter lovers dream – soft, delicious peanut butter oatmeal cookies with a peanut butter cream that is seriously unreal.

You will need:

For the cookies:

1 stick unsalted butter, softened
1/2-3/4 cup creamy peanut butter
1/2 cup sugar
1/4 cup light brown sugar, packed
1/2 teaspoon vanilla extract
1 egg
3/4 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1 cup quick oats (remember how I said I hate having leftover ingredients around for too long?)

For the filling:
1/2 cup creamy peanut butter
3 tablespoons unsalted butter, softened
1 cup powdered sugar
2 tablespoons heavy cream

Preheat oven to 350 degrees F.  In a small bowl, combine flour, baking powder, soda and oats.  In a separate bowl, cream the butter and peanut butter together.   Add the sugar, brown sugar and vanilla and continue to beat until the mixture is fluffy. Add the egg and beat until combined.  Add the dry ingredients and mix until just incorporated.  Scoop batter into 1-inch sized balls.  I skipped this step, but if you’d like to make them look like classic peanut butter cookies, make a criss-cross patter with a floured fork.  Bake until cookies are golden, about 10 minutes.  Allow to cool completely.

For the filling, cream together the butter and peanut butter. Add the powdered sugar and mix on high. Gradually add the cream until mixture is thick and smooth.  Once cookies are cool, plop some filling on the bottom of one, match it with a similar sized cookie, squish ’em together, and enjoy…. a lot. 🙂Image
