Strawberry Cake Cookies

As you all know by now, I occasionally like to play around with a boxed cake mix and turn it into something new and delicious.  Since I’ve done cake batter cookies and had serious success with them, I decided trying out my FAVORITE boxed cake in cookie form was the obvious next step.  And so, I bring you Strawberry Cake Cookies!

You will need:

1 box (18.25 oz) strawberry cake mix
1 teaspoon baking powder
2 large eggs
1/3 cup vegetable oil
1/2 teaspoon vanilla extract
I added mini chocolate chips to about half of my cookies (totally delicious!), so throw some of those in to taste if you’d like 🙂



Pre-heat oven to 325.  As I always tend to do with recipes like this — throw everything into your mixing bowl and combine it all together.  There definitely is a chemistry to baking, and often doing this in steps/separating wet and dry ingredients is important, but remember that we’re working with a box of cake mix here, and that’s pretty hard to mess up!

Scoop rounded tablespoons of dough onto a cookie sheet, place in oven, and bake for about 10 minutes.  These cookies shouldn’t get brown, so don’t feel like you need to keep them in the oven longer!  They are cakey and delicious and perfect after 10 minutes 🙂 These are great plain or with chocolate chips.  They’d also be seriously yummy with white chocolate chips, or if you’re feeling fancy, a cream cheese drizzle!
