Candy Cookie Muffins

Sometimes there’s nothing like jazzing up a classic cookie with a seemingly impressive presentation… that’s actually really easy. One of my favorite examples for this is taking the base for a chocolate chip cookie (hold the chips… Unless you really love chocolate, in which case, bring it on), plopping it into a mini muffin pan, shovin’ some candy in it and calling it a day. I’m a pro at making people think I took time to do something special with my food when in reality I’ve done almost nothing — these will definitely not disappoint!

You will need:
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup butter, room temperature
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 teaspoon vanilla extract
2 large eggs
An unwrapped pile of whatever candy you’d like to use (I used mini Reese’s cups — these would be great with Rolos, mini Snickers, you get the idea)


Pre-heat your oven to 350. In a large bowl, beat butter, sugars, eggs and vanilla extract until creamy. Gradually beat in flour mixture until fully combined. In a prepared (greased) mini muffin pan, scoop rounded tablespoons of dough into each well. Push a piece of candy into the center. Bake for about 8 minutes, until the very edges of the cookie muffin are beginning to get golden. Cool for a few minutes before removing from the pan.

Just as easy as chocolate chip cookies, but a little more fun

    Can I do this in a regular cupcake pan and just have really big cookies? I don’t have a mini muffin pan. How would I adjust the baking time?
