Classic Cheesecake

Every year I receive the same birthday request from one of my best friends– cheesecake, cheesecake, cheesecake. I always happily oblige, and it is always well received 🙂 this is a comparatively basic recipe, since a lot of cheesecake adds sour cream or fancy additions, but don’t doubt that it is really delicious!

You will need:
For the crust:
1-1/2 cups Graham Cracker Crumbs
3 Tbsp. sugar
1/3 cup butter or margarine, melted

For the filling:
4 pkg. (8 oz. each) Cream Cheese, softened
1 cup sugar
1 tsp. vanilla
4 eggs

Preheat oven to 325°F. Start off by mixing graham crumbs, 3 Tbsp. sugar and butter until well combined; press onto bottom of 9-inch springform pan.
Beat cream cheese, sugar and vanilla with mixer until fully blended. Add eggs, 1 at a time, mixing on low speed after each just until blended. Pour over crust.

From here, bake this baby for about 55 minutes, or until center is almost set (a little jiggly still – the center will continue to cook once you’ve removed it frok the oven.) Loosen cake from rim of pan and cool before removing rim. Refrigerate for at least 4 hours before slicing and serving — don’t forget to throw some fruit topping or whipped cream on, if you like!
