Now that it’s summer, I anticipate spending a lot more time grilling — I know it’s a rare occasion that I post real food on here, so when I do post it, you know it’s got to be something special. With a holiday weekend coming up, and plenty of BBQs to follow, it’s definitely not going to hurt to have a really unique, tasty way to grill up one of your sides! This recipe comes from my boyfriends step mom, who I have to thank for surprising me with how amazingly delicious you can make grilled corn with just a few simple steps!
You will need:
1 13.66 oz can coconut milk
3 tbsp light brown sugar
2 bay leaves
4 ears sweet corn
Start heating up your grill as normal. In a sauce pan, heat coconut milk, brown sugar, and bay leaves. Stir and continue to heat until fully combined and boiling. Once it has been brought to a boil, remove from heat and allow to cool.
While that’s cooling, begin to husk your corn, leaving the husk at the very end, pulled back so you can use it as a handle. Apply the cooled or semi-cooled coconut milk mixture to the corn and place on the grill. Grill for about 8-10 minutes, turning a few times, and basting with the coconut milk often.
This corn goes great on the side of anything I’ve ever eaten it with, and is a really great switch up from the norm 🙂
