Peanut Butter Monster Bars

I’m really bad at keeping things organized, and often find myself having to empty out my whole baking pantry and find homes for everything all over again. This inevitably leads to me finding endless bags of half used add ins and cupcake wrappers in every color. Not so terrible, but I always have to use the leftovers up! Easiest way to do that? With some Monster Bars, of course! The dough for these cookie bars is very forgiving, so you can basically throw whatever you have laying around in to the mix and it will probably come out great 🙂

You will need:
1/2 cup unsalted butter, melted
1 large egg
1 cup light brown sugar, packed
1 tbsp vanilla extract
3/4 cup creamy peanut butter
1 cup all-purpose flour

For my add ins I used this, but add as you please:
1 cup Peanut Butter M&Ms
3/4 cup semi-sweet chocolate chips
1/2 cup white chocolate chips
1/3 cup Heath Bar Toffee Bits
1/4 cup butterscotch chips

Preheat your oven to 325. Start off by combining your melted butter and brown sugar. Add in egg and vanilla and mix until smooth. Throw in the peanut butter and combine completely. Mix flour until the mixture comes together. Fold in all of your add ins. Spread your dough in a greased 8×8 brownie pan. If you want these to turn out extra pretty, push some of your toppings into the top of the dough so they remain visible. Bake for about 20 minutes, until the top of the cookies set and a toothpick inserted comes out clean. Allow these to cool in the pan for a bit before slicing ’em up and serving them! Glass of milk will be necessary for this peanut buttery treat 🙂
