As a peanut butter obsessed person, I’m obviously always looking for ways to incorporate peanut butter into delicious baked goods. Since I really love peanut butter in my morning oatmeal, it only made sense to turn that into a great little cookie! These were just sweet and hearty enough with a perfect peanut butter kick — and the flavor was topped off as all peanut butter treats should be, with a chocolate drizzle (….and more peanut butter)
For about 3 dozen cookies, you will need:
3/4 cup creamy peanut butter
1/3 cup sugar
1/3 cup light brown sugar
1 stick unsalted butter, softened
2 tbsp whole milk
1 tsp vanilla
1/2 cup quick cooking oats for dough, 1/2 cup quick cooking oats for rolling
1 cup all purpose flour
1 tsp baking soda
1/2 tsp salt
And for the drizzle:
1/2 cup chocolate chips + 1 tsp shortening, microwaved
1/2 cup peanut butter chips + 1 tsp shortening, microwaved
Preheat your oven to 350. Start off by whipping together your peanut butter and sugars. Add butter and combine completely. Throw in your eggs, milk, and vanilla, and beat. Fold in 1/2 cup quick cooking oats. Finish it off with your flour, baking soda, and salt, and bring it all together.
Scoop rounded tablespoons of dough, roll em up in the leftover oats, and place them on a cookie sheet. Bake for about 8-10 minutes, until lightly browned. Allow to cool before drizzling.
Once cookies have cooled, prepare your drizzle by microwaving your chocolate chips and shortening in 30 second intervals until combined and smooth. Drizzle over cookies, repeat with your peanut butter chips, and have at ’em!
