Iced Italian Wedding Cookies

Some treats are traditionally reserved for holidays and special occasions — sometimes I love this, because there’s nothing like that once or twice a year pecan pan; but sometimes, you really just need to have a good batch of casual Italian wedding cookies. This recipe yields some of the most wonderful little cookies, a little ball of vanilla perfection, rolled in a sweet icing and topped with rainbow sprinkles 🙂

Cookies
2 sticks butter, room temperature
2 eggs
1 cup sugar
4 cups all purpose flour
2 tbsp baking powder
2 tbsp vanilla

Icing
1 3/4 cups powdered sugar
2 tbsp milk
1 tbsp vanilla (or anise, if you prefer that flavor)
And sprinkles, if you want them!

Pre-heat your oven to 350. Combine your butter and sugar until soft and creamy. Add eggs and vanilla, mixing well. Mix up the flour and baking powder, then blend into the butter mixture. Break off small, walnut sized pieces of dough and shape into little balls (or bows, braids, knots, “s” shapes, or whatever shape you prefer). Place in the oven and bake for about 15-18 minutes.

Place cookies on a wire rack and cool as you make your icing — Blend sugar and your choice of flavoring, adding milk slowly to form a soft, smooth icing. Once cookies are mostly cooled, ice cookies as desired, sprinkle on your sprinkles, and take a bite out of these sweet little treats!
