Almond Joy Banana Bread

In the aftermath of Halloween and in an apartment full of unclaimed candy, drastic measures must be taken. The first obvious choice is to make some monster cookies, but there are other equally great options! Remind yourself how good banana bread goes with almost anything sweet and make your choice! I chose almond joys this week — banana, chocolate, coconut, and almonds? SOLD. And what a delicious sale it was.

You will need:
3 or 4 ripe bananas, smashed

1/3 cup melted butter

1 cup sugar

1 egg, beaten

1 tsp vanilla

1 tsp baking soda

Pinch of salt

1 ½ cups all-purpose flour

1-2 cups of your choice of chopped up candy

As I’ve said before, banana bread is such an easy batter that it really doesn’t require separating ingredients. So go ahead and preheat your oven to 350, and toss everything but the candy in your bowl and mix. Once fully combined, add in your candy, saving a little to sprinkle on top. Pour batter into a well greased loaf pan, sprinkle your remaining candy on top evenly, and let it bake! Banana bread is dense and will probably take about 60-70 minutes to cook all the way through if you’re making a single big loaf with this recipe– adjust time for smaller loaves (half it) or muffins (about 10-13 minutes) accordingly. Once a toothpick inserted into the center comes out clean, pull your bread out and allow it to cool for a few minutes before transferring to a wire rack to cool completely. Slice and serve, this flavor combination is sure to seriously impress!
