Banana Granola Muffins

This week at the grocery store, I came across a beautiful discovery — the “bunches of oats” from Honey Bunches of Oats cereal alone, marketing itself as granola. I was interested. I’m not a huge granola-and-yogurt kind of person, so I figured I’d get creative and include this beautiful delicacy of just bunches in some banana muffins. The result? Delicious.

You will need:
1 1/2cups all-purpose flour
1 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 stick unsalted butter, melted and cooled
1 egg
A little less than 1/2 cup whole milk
1 teaspoon vanilla extract
2 over ripe bananas
1/2 cup granola, plus more for sprinkling

Feel free to toss in shredded coconut or chocolate chips, too! These would be delicious additions 🙂


Preheat your oven to 350. As always with any banana creation I make, I think very little about order of ingredients– throw it all (except the granola!) into a bowl and mash it all together, scraping down the sides, until well combined. Fold in the granola (and whatever else you may add). Spoon into a lined muffin pan, filling wells about 3/4 full. Sprinkle a little extra granola on top, and bake for about 8-12 minutes, until the edges of the muffins are fully browned a toothpick inserted in center comes out clean.

Allow a few minutes to cool and enjoy! This was a nice way to mix up my banana bread norm and enjoy some just bunches granola 🙂
